Eggplant spread

This is also an oldie, but yummy: Eggplant Spread:

  • 1 medium eggplant
  • 1 bell pepper
  • 1 tomato
  • ¼ onion
  • 1 clove of garlic
  • 2 tbsp of grape seed oil (olive oil is fine)
  • ½ tsp of sea salt
  • 2 tsp (or more) mixed pepper or black pepper
  • 1 tbsp of hummus (optional)

Cut the eggplant, bell pepper, tomato, and onion into small (1 inch or so) pieces. Mince garlic. Mix in a bowl with 2 tbsp of oil, 1 tsp of salt and ½ tsp of pepper.
Put it on a baking pan and bake for about 40-45 minutes on 400.
Take it out of the oven. (Try not to eat it yet!) Cool (I was impatient and put it into the fridge for a while.)
In a blender blend it with the hummus, hemp seeds, and another 1 tbsp of pepper (or as desired, I think I added more pepper).
